Kankyo Shuzou's Black Mirin has been aged for 20 years. This dark, rich flavoured mirin was created quite by accident when bottles were mislaid in a cellar for more than 10 years. Mirin manufacturers usually add sugar during the rice and koji fermentation process with additional cane sugar alcohol to speed up the maturation. However, nothing is added to this Black Mirin. The production process is slower, resulting in flavours that are natural and pure. Rice being rich in carbohydrates and amino acids oxidise giving this liquid its black colour. The flavour of alcohol also disappears. Upon tasting, there are pleasant notes of black sugar, rum and grapes combined in a full but smooth flavour.
