Made in Ehime prefecture on Shikoku Island, Central Japan, this Lycopins Tomato Ponzu is a must-have pantry ingredient which truly brings any dish to life!
Yukusawa uses local Ehime tomatoes that have been farmed in the region's highlands for over 50 years. The tomato plants are cross-pollinated by the local bees called "kuro maru hana bachi" and to preserve this process, the farmers only utilise natural pesticides. So not only are the tomatoes delicious, they are safe to eat and free from chemicals. In addition, only fresh mountain water is used and all this carefully considered farming results in tomatoes that have a good balance of sweetness and acidity, ideal for making this delectable tomato ponzu.
With these Ehime tomatoes, the Lycopins first make a tomato vinegar to which they add Kochi Yuzu, Koikuchi Shoyu (dark soy sauce) and Katsuobushi (bonito stock) to make a ponzu with real flavour!
Keep a bottle or two stashed, ready to use in stocks and sauces to create amazing umami flavours. It is also great as a salad dressing, a dipping sauce for grilled meats and sashimi.
